It’s no secret how addicted I am with avocado. I love how healthy it is, very versatile and don’t even get me started with it’s texture.It really good, So I wouldn’t keep you waiting anymore to share this really good brunch obsession of mine that is so easy to make at home.

This recipe is inspired from WISH restaurant that I’m always at. So if you’re planning on hosting a brunch with your girlfriends this recipe is perfect together with buttermilk pancakes, fresh berries, maple syrup, orange juice or if you want to be naughty bring out the champagne to make mimosa’s. Offer them some coffee and washed it down with fresh fruits. Nothing fancy. It’s the way you serve it! so be creative.

WHAT WE NEED: ( for two people or if you’re really really hungry makes one )

POACH EGGS:

  • 2 Large Eggs
  • 2 tablespoon white vinegar
  • boiling hot water

FOR THE TOAST

  • 1 Rye bread slice (a really big one so we can split it to two making the calorie intake lower)
  • 4 grape/cherry tomatoes
  • 1 large Ripe Avocado or 2 small one
  • 40% less fat PC goat cheese
  • 2 poach eggs
  • a pinch of salt for taste

Let’s get started….  cut everything in half while you’re doing this boil a small pot of water for our poach eggs.

When the water started boiling like crazy, put the 2 tablespoon of white vinegar, this is a major key if you want your poach egg to be successful. I cook mine one by one, you can also put it on a cup so you don’t get burn by the heat of the steam when pouring it on the pot making white first. Gently start making a a mini whirlpool to help the egg white wrap around the yolk.

On the other side , start heating your pan to make toast , you can use almond butter, butter or like what I used is EVOO. Make sure to toast each side till its golden brown, Don’t burn it,  just make it crispy on the outer layer of the rye.

Set aside everything.

Now on a bowl, put your avocado and a little bit of salt for taste, make sure to throw away the seed. haha

Then beat the life out of the avocado till it become smooth and smash. Like the photo.

now we’re ready, put your avocado generously on your toast.

then the poach eggs on each slice.

4 half cut baby tomatoes to each toast and top it off with lots of goat cheese.. Ladies this is the best part of this meal so carry on put as many as you want.
