I’m on my 2nd Month of Bikini Ready Challenge and the recipes they have for their students are super delicious so I’m sharing one of my favourite in their ebook!
Two Bite Chocolate Cocoa Balls Makes 16 balls
1/3 cup cocoa
2 tbsp all-natural almond ( try natural peanut butter, this is what I use )
1 cup almonds (I use shaved almonds)
2 tsp vanilla extract
1 cup medjool dates (ensure they are all-natural and sugar/additive free)
1/2 – 1 cup shredded coconut (optional-you can reduce the amount of coconut if you don’t want strong flavour) I use 1/3 cup
1 tbsp agave/maple syrup/honey (optional – for added sweetness) I use maple syrup, I love the flavour
1 tbsp Chia seeds
Directions:
Blend the almonds and dried fruit in blender or food processor until ground. Depending on how smooth you want your balls, you can adjust how finely you ground them. you will end up with astick type of past.
My blender is not the strongest so mine end up looking like this, but it still good. they’re still going to be able to blend well as a ball.
Pour into a bowl and add cocoa, peanut butter, vanilla extract, coconut, chia seeds and maple syrup.
Mix all the ingredients together with your hands until well mixed.
Form into little two-bite balls and place on a plate. You can now roll them on extra shredded coconut if desired. Then put them in the fridge to harden them. and enjoy!
I eat them once a day in between my breakfast and lunch. Twice if I can’t help myself. haha
